Rosé brut sparkling wine, produced using grapes from Primitivo vineyards.
The vines, cultivated on espaliers, produce a quantity of grapes which is limited to 90-100 tons per acre in order to guarantee optimal maturation. The microclimate of the karst valley of Canale di Pirro, characterized by extreme temperature ranges, even during the hottest periods of the year, gives the grapes a considerable concentration of flavours. The grapes, which are harvested by hand before they are fully matured, are softly pressed and destemmed.
The wine undergoes a nine-month slow fermentation, known as Charmant process, followed by bottle ageing for at least 3 months.
