Vintage: 2012
Red wine, produced using grapes from our Cabernet Sauvignon vineyards.
The vines, cultivated on espaliers, produce a quantity of grapes which is limited to 90-100 tons per acre in order to guarantee optimal maturation. The microclimate of the karst valley of Canale di Pirro, characterized by extreme temperature ranges, even during the hottest periods of the year, gives the grapes a considerable concentration of flavours. The grapes, which are harvested by hand, are pressed and destemmed, then fermented at a low temperature in order to preserve the bouquet, and softly pressed.
Ageing takes place in oak barrels.
